And coffee doesn’t give itself up all at once — it comes out in an order. The sharp, sour, acidic notes leave first. The sweet, round, chocolatey ones follow. The harsh, dry, bitter ones come last.
You already know both ends of this. Under-extracted coffee is the thin, sharp cup that tastes like it’s missing something — because it is; the water stopped after the sour part and never reached the sweetness. Over-extracted coffee is the harsh, hollow-bitter one you reach for milk and sugar to cover up — the water kept going and dragged out the bitter dregs. A great cup is neither: sweet, balanced, complete, with the bitterness and acidity sitting in the back seat instead of the front. The only difference between the three is how much dissolved.
So a great cup is really a matter of timing, and every other variable on this page is trying to land that timing in the sweet spot. Grind size: the biggest knob you control
If extraction is the dial, grind is the knob you’ll reach for most. Grinding breaks the bean into pieces, and the size of those pieces decides how fast the water can work. Smaller pieces have more surface area, so water pulls flavor out of them quickly. Bigger pieces give it up slowly.

How much coffee: your dose
This is the strength dial, and people are shy with it — which is the quiet reason so much home coffee tastes thin. A rounded scoop per cup isn’t generous; it’s correct. Use too little and nothing else you do will save it — there simply isn’t enough coffee in the water to taste like much. Get the amount right first, then adjust the grind, in that order. Hot enough to finish: water temperature
Water has to be hot enough to pull out the sweet, late-arriving flavors, and that means genuinely hot — 195 to 205°F, just off a boil. The reason is simple chemistry: hot water is a far better solvent than cool water, so it dissolves those slow, sweet compounds that cooler water leaves stuck in the grounds. Cooler than that and the water quits early, leaving you the sour front half again. (It’s exactly why so many cheap drip machines make weak coffee: they never get hot enough.) The thing you rarely think about: your water
Your cup is about 98% water, so it matters more than almost anyone expects. It’s not that minerals add flavor exactly — it’s that a little mineral content actually helps water grab and hold coffee’s flavors, while very hard water clamps down on them and mutes the cup (and furs up your machine). Water that’s too soft, on the other end, tastes flat. You don’t need anything exotic: a basic carbon filter pitcher hits the sweet spot for most people, and it’s the cheapest upgrade in coffee. Time: how long they’re together
Extraction also depends on how long the water and grounds stay in contact, and that’s mostly set by your method. An espresso shot is over in half a minute; a French press steeps for four; cold brew sits overnight. That’s why each method wants its own grind — you don’t manage the clock directly, you match your grind to the method and let the method handle the time (which, happily, is one of the things we set for you).
Before you brew: the bean, the roast, the age
The variables above are how you brew. These three are what you’re brewing with — decided before the water ever touches the grounds, and just as important.
The bean. Most good coffee is arabica, prized for its range of flavor; robusta is bolder, punchier, and higher in caffeine. Neither is “better” — they’re different starting points. Arabica, robusta, and the rest.
The roast. Roasting is cooking, and how far it’s taken changes everything — lighter roasts keep more of the bean’s origin character and acidity, darker roasts trade that for deeper, roastier, bittersweet flavor. What roast level actually changes.

They all push the same dial
Once you see extraction as the thing every variable moves, a useful trick falls out of it: if one knob is stuck, you can compensate with another. Cheap machine that brews too cool? Grind finer to make up for the missing heat. Coffee coming out bitter? Grind coarser or shorten the brew. Sour and thin? Grind finer or give it more time.
